Ceviche

Ceviche is a seafood dish originating in Latin America and the Caribbean, with evidence of it being consumed in parts of Peru nearly 2,000 years ago. The dish comprises of fresh raw (white) fish sliced wafer thin, and cured in citrus juices such as lime or lemon, served with herbs and chili peppers, though today there are many combinations.
